Ingredients
3 large eggs, separated
Kosher salt and freshly ground black pepper
2 ounces (55g) grated Gruyère or cheddar cheese, divided

1.Separate Eggs: Start by separating the egg yolks from the whites into two different bowls.
2. Whisk Egg Whites: In the bowl with egg whites, add a pinch of salt and beat with an electric mixer or whisk until stiff peaks form. Set aside.
3. Mix Egg Yolks: In the other bowl with egg yolks, add grated cheese (reserving a little for garnish), salt, and pepper. Mix until well combined.
4. Combine Mixtures: Gently fold the beaten egg whites into the egg yolk mixture using a spatula. Be careful not to deflate the egg whites completely; the mixture should remain light and airy.
5. Cooking: Heat butter in a non-stick skillet over medium heat until melted and hot. Pour the egg mixture into the skillet, spreading it out evenly with the spatula.
6. Cooking Process: Cook for about 2-3 minutes, until the bottom is golden brown and the top is almost set.
7. Finish Under Broiler: Preheat your oven's broiler. Place the skillet under the broiler for 1-2 minutes, until the top is golden brown and puffy, resembling a soufflé.
8.Serve: Carefully slide the omelette onto a plate. Garnish with a sprinkle of grated cheese and freshly ground black pepper if desired. Serve immediately while hot.
