Ingredients

- 1 large egg

- 1 cup creamy peanut butter

- 1/3 cup packed light brown sugar

- 1 teaspoon pure vanilla extract

- 1/2 teaspoon baking soda

- Pinch of kosher salt

- 1/3 cup semisweet chocolate chips


Method

1. Prepare the Dough

  In a medium bowl, whisk the egg until well beaten. Add the peanut butter, brown sugar, vanilla extract, baking soda, and a pinch of kosher salt. Stir the mixture until well combined and slightly thickened, about 15 seconds. Fold in the chocolate chips.


2. Form the Cookies  

  Roll the dough into 1-inch balls, using about 1 level tablespoon of dough for each cookie. Flatten each ball into a disk about 1 1/2 inches wide. Place the disks on a plate.


3. Cook in the Air Fryer

  Line the air fryer basket with foil, creating a 1 to 2-inch overhang on two opposite sides for easy removal. Arrange the cookie disks in the basket, spacing them about 1/2 inch apart. Cook at 350°F (175°C) for 5 to 7 minutes, or until the cookies are deeply browned. Carefully lift the foil with the cookies from the air fryer basket (the foil will be hot) and transfer to a wire rack. Let the cookies cool on the foil for about 5 minutes until they firm up. Use a thin spatula to transfer the cookies to the wire rack and let them cool completely.
